Ingredients

  • 2 teaspoons oil
  • 1-1.5 cups (80 g) veggie crumbles , crumbles veggie burger, TVP, or crumbled veggie sausage, 7 oz
  • 3/4 cup chopped onion
  • 1 bell pepper chopped (or 1 cup chopped mixture of coloured pepper red green orange )
  • 3/4 cup chopped celery
  • 1 cup (185 g) white rice, I exploit basmati
  • 2 teaspoons paprika
  • 1/2 teaspoon thyme
  • 1/2 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 tablespoon or more cajun seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 bay leaves
  • 2 cups (500 ml) water or broth
  • Parsley and lime juice for garnish

Instructions

  • Heat a big skillet over medium heat and add the oil and the veggie crumbles / crumbled veggie sausage and cook for 3-5 minutes or until golden on a few of the edges.

  • Then add the onion, bell pepper, celery, and a very good pinch of salt and stir. Proceed to cook for one more 3-5 minutes. Then add within the rice and blend in. Cook for one more 2-3 minutes to toast the rice nicely.

  • Add in all of the spices and salt and blend in. Add the water or broth and the bay leaves if using and blend in. Cover the skillet with the lid, reduce the warmth to medium-low and cook for 13-17 minutes, depending in your stove and the thickness and depth of your skillet.

  • Once all of the water is absorbed, check if the rice is cooked to your preference, if not close the lid again and proceed to cook for a number of more minutes.

  • As soon because the rice is cooked, switch off the warmth. Let the rice sit for two minutes and open the lid. Fluff the rice rather well and serve topped with parsley and lime juice. Serve the rice because it is or top it with some cajun-rubbed crispy baked tofu.
