Pumpkin Chocolate Chip Muffins

 

Hope everyone had an ideal weekend. I had a gorgeous baking weekend, I got two orders one is a Pineapple the wrong way up cake and one other one is my favorite Devils food cake.  I used to be busy in doing stuffs for that and got it delivered on time. Then had a fast weekend shopping.

 

 

Now coming to the recipe, that is my next recipe for the halloween. A chocolate filled pumpkin muffins , these are beautiful muffins which has chocolate chips scattered all
over it. They turned out so moist and fluffy and was so wealthy. I took few
muffins to office and everybody loved it lots.

Ingredients for Pumpkin Chocolate Chip Muffins

  • All Purpose Flour /Maida  – 1 cup
  • Baking Soda – ¾tsp
  • Baking powder – 1tsp
  • Ground Dry Ginger-¼ tsp
  • Salt – ¼ tsp
  • Pumpkin Puree – ¾cup ( Click here for recipe)
  • Oil – ½ cup
  • Sugar – 1 cup
  • Chocolate Chips – 1cup + extra for sprinkling on top of muffins
  • Egg – 1
  • Vanilla Essence – 1tsp
  • Water – ¼ cup

Tips on how to make Pumpkin Chocolate Chip Muffins

  1. Preheat the oven to
    180 Degree C / 360 Degree F. Line your muffin tin with cupcake liners.
  2. Take flour, baking powder, baking soda, cinnamon, salt in a bowl and blend well. Set this aside.
  3. Take a bowl. Add in oil, sugar and egg. Beat well till they’re mixed.
  4. Now add in vanilla and beat again.
  5. Now add within the pumpkin puree, water and blend well.
  6. Add the dried ingredients and beat well. Don’t over mix the batter.
  7. Add the chocolate chips and using a spatula fold them in.
  8. Now using a ice cream scoop, spoon equal amount of batter into the muffin cases.
  9. Sprinkle some chocolate chips on top of the muffins.
  10. Bake them within the oven for 20-25 mins till they’re golden. Use a tooth pick and insert
  11. them into the muffin, in the event that they come clean they’re ready.
  12. Remove them from oven and allow them to cool completely before removing from the cases.
  13. Serve warm or at room temp.

Take all of your ingredients
Take flour in a bowl
add all of the dry ingredients into it
and blend well..
Take egg, sugar and oil in a bowl..
and beat them till they’re mixed
add in vanilla
add pumpkin puree
now goes water
and blend well
now add the mixed ingredients
and blend well
give all the things a final stir
add chocolate chips to it
and blend well
Now line your muffin tin cupcake cases
use a icecream scoop to take the batter
Scoop them into the cases
sprinkle some chocolate chips over them
All Beautifully baked
Remove and Serve
