I really like beets when it’s made into thoran like this. I don’t love the chunky beet poriyal, this one is my favorite. It has a sweeter taste and it smells so coconut out of your ground coconut masala and coconut oil which we use. I loved the color and look of this loads.

About Beetroot Thoran Recipe
Thoran, also often known as upperi in Northern Kerala, is a form of dry vegetable dish with coconut that originated within the Indian state of Kerala. This popular dish is often served with rice and curry and can also be included in the standard Keralite sadhya.
Thoran is a dry dish traditionally manufactured from finely chopped vegetables like cabbage, yardlong bean and other bean varieties, unripe jackfruit, bittergourd, or elephant foot yam, leaves like green or red spinach, Moringa oleifera, or Ipomoea aquatica, and flowers like Moringa oleifera or Sesbania grandiflora. The chopped vegetable is stirred briefly in a pan over a hot fire with grated coconut, mustard seeds, curry leaves, and turmeric powder.

Ingredients for Making Beetroot Thoran Recipe
- Beetroot – 2 medium size peeled and chopped very finely
- Coconut – 1 cup
- Dry Red Chilli – 2
- Shallots / Sambar Onion / Chinna Ulli – 2
- Garlic – 2 cloves
- Cumin Seeds / Jeerakam – 1 tsp
- Coconut Oil – 2 tblspn
- Mustard Seeds / Kaduku – 1 tsp
- Urad dal / Ulundu Paruppu – 1 tsp
Beetroot :
Beetroot has an earthy, barely bitter flavour. While this is not necessarily a foul thing, Martinez believes they work best when combined with vibrant, sweet, and fresh flavours. Add salt if you happen to’re boiling them.
Coconut :
Coconut meat is delicious and barely sweet, and it could actually be eaten raw or dried. It’s used to make a wide range of products, including coconut milk, cream, and oil.
Shallots :
Shallots are a bit sweeter than regular onions and have a more subtle flavor. They’re good utilized in raw applications where you wish an oniony flavor without an excessive amount of punch, similar to in salads and vinaigrettes, , or in slow roasted or braised dishes, where their sweetness can enhance a dish without watering it down.
Tips on how to Make Beetroot Thoran recipe
- Heat oil in a kadai. Add in mustard and urad dal. Cook for a min.
- Now add within the chopped up beets and saute for five mins till the raw smell leaves away.
- Now add in salt and blend well.
- Pour in water and canopy with a lid. Cook till the beets are tender and completely cooked.
- Now open the lid and if there’s any water left, increase the warmth and evaporate it.
- Once the water is gone and beets is dry. Add in the bottom up masala and blend well.
- Fry the entire thing for a very good 5 mins or so.
- Switch off the flame and serve.
