About Upperi Recipe

Upperi is a keralan sweet or snack made with raw plantain also often known as nendran banana or kerala banana. Raw nendran is utilized in the making of upperi. 

Bananas are cut into half moon shape and fried till crispy. Fried bananas are coated in jaggery syrup and tossed with rice flour. 

I desired to make this recipe very long time back. But in some way it was placed on a hold. Few days back we harvested our first banana bunch from our backyard banana tree. It is sweet big nendran variety. So took a bunch of those banana and made a big batch of chips in addition to this upperi. It turned out super delicious and excellent, i needed to blog it.

Ingredients for Upperi (Sharkara Upperi)

Raw Plantain – Use raw plantain also often known as kerala nendran (raw variety) to make upperi. Deep fry plantain on low medium heat till crispy for best taste and shelf life.

Jaggery – I prefer to use dark cane sugar (pahu vellam) for higher taste and texture. The jaggery has to coat the banana in a thick shell like texture.

Rice Flour – Rice flour makes the upperi less sticky when it’s stored for an extended time frame.

Spices – spice powders like dry ginger powder, cardamom powder and cumin powder is used.

1)Take raw banana

2)Slit it gently on the skin alone and peel it off

7)Heat oil for deep frying

8)Fry in medium heat till the banana get nice and crispy

9)This process will take around 30 mins

10)Fry in medium heat oil

11)Drain and put aside

12)If you break open a fried piece. it should be crispy

13)Take jaggery in a pan

14)Add water

15)Mix well

16)bring it to a boil

17)Cook till syrupy. Add cumin powder

18)Add in cardamom powder

19)Add in dry ginger powder

20)Mix well

21)Add raw banana pieces

22)Toss well

23)Coat it well.

24)Take it off the warmth

25)Add rice flour

26)Mix well

27)It would coat all of the pieces beautifully and get dry
