1)Wash and cut potatoes in half. Take them in a pressure cooker, cover with water and pressure cook for 3 to 4 whistle. Once the pressure is released, open the cooker and strain the potatoes in a colander. Allow the potatoes so it cool for 10 minutes. Now peel off the skin.

Roughly mash the potatoes using fork or potato masher. Put aside.

Making Potato masala

2)Heat oil in a saute pan or frying pan. Add in mustard seeds and permit them to splatter.

3)Add in curry leaves and blend well.

3)That is the principal flavouring for the potato masala. I ground ginger, garlic and green chillies to a effective paste. Add this paste into the oil.

4)Mix and cook the ginger garlic chilli paste for 1 to 2minutes till raw smell leaves.

5)Add in some salt and turmeric powder for color. At this point you’ll be able to add in sliced onions for those who want.

6)Cook the mixture till oil separates. Now the raw smell from the ginger garlic will need to have gone.
