About Appam (Hoppers)
Appam Tamil: ஆப்பம் is a sort of pancake, originating from South India, made with fermented rice batter and coconut milk, common in Kerala, India. It’s eaten most ceaselessly for breakfast or dinner.

Ingredients for Appam (Hoppers)
Raw Rice / Pacharisi
Raw rice is added within the making of appam since it helps with the feel of appam. Regular rice won’t give the correct texture to the appam. Raw rice is soaked for few hours and ground till smooth.
Urad dal
Urad dal helps in fermentation of the batter and makes it soft.
Sugar
Sugar is added in appam batter which helps within the fermentation of the batter. It adds sweetness to the appam batter which makes it more tasty.
Cooking Rice batter
Cooking rice batter helps with the fermentation and make the appam soft.

Methods to Make Appam Batter
Soaking
Take raw rice, urad dal in a bowl and wash well. Soak in water for 4 hours.
Grinding Batter
Strain the rice and urad dal and take it in a blender. Add in cooked rice and mix till smooth. Once the batter is ground. Take it in a bowl.
Now take the blender jar, add 1 cup of water to it. Swirl and clean the blender very well. Take the combination within the sauce pan. Cook on high heat and keep mixing till it thickens well. Put aside to chill completely.
Fermentation
Once the combination is cooled. Add it in to the batter. Add salt and blend well. Cover and leave to ferment for twenty-four hours. Once the batter is fermented. It’ll look foamy and bubbly.
Cooking Appam
Heat appam pan, pour a ladleful of batter and swirl. Cover and cook till the underside is crispy. Remove and serve.

This appam recipe is made with raw rice, fresh coconut. It needs a little bit of baking soda for fermentation.
Ingredients for Appam with Coconut
- Raw Rice / Pacharisi – 2 cups
- Fresh Coconut – 1 cup grated
- Sugar – 2 tblspn
- Salt to taste
- Baking Soda – ½ tsp
- Water as needed for grinding
- Oil for greasing pan
Methods to Make Appam with Coconut
- Take raw rice in a bowl and wash it well. Now cover it with clean water and let it soak for 4 to six hours or overnight.
- Once it’s soaked drain it and add it to blender. Now add in coconut and mix them.
- Once it’s half blended, add water and make it right into a smooth paste. Because it is rice, it won’t be too smooth, nevertheless it must be as smooth as possible. It doesn’t take more that 8 to 10 mins.
- Now take them in an airtight container. Cover it and let it ferment overnight.
- The subsequent day, add sugar, salt, baking soda and a few water and make it right into a smooth runny batter.
