I even have heard about rogan josh before and tasted it in one among the restaurant i visited, but never considered cooking it at home. Each time i order it in restaurant here, then serve it identical to normal curry, it’s made using an onion tomato base. But i’ve heard that rogan josh needs no onion, garlic, tomato. It’s made with plain yogurt and spice powders. At some point a viewer requested it and i made a decision to present it a try.

About Rogan Josh Recipe

I desired to make it the authentic way and use only yogurt and spice powders. Luckily i had all of the spices on hands specially black cardamom which i purchased months back when i visited nuts and spices in chennai. It’s a must spice since it gives the aroma and flavour to the dish. 

What’s Rogan Josh?

Rogan josh needs to be red in color thats why it known as as rogan josh because when you finish making this curry the rogan the red oil should float on top of the curry. Within the authentic recipe they add a root of a herb called as rattan jot which provides the red color to it. The spices that are added on this curry is must because that what makes rogan josh, rogan josh. 

Since I do not have that and it’s difficult to search out that for us. I suggest you to purchase kashmiri red chilli powder and add it on this curry which provides the red color naturally. Some people will add a touch of saffron on this too. But i didn’t add. I kept it plain and easy. This curry taste best when served with hot steamed rice, naan or paratha.

  • Mutton / Lamb
  • Lemon Juice
  • Salt to taste
  • Garam Masala Powder

The way to make Rogan Josh at Home

Marinating Lamb

Take mutton in a bowl. Add salt and lemon juice. Mix well, leave it to marinate overnight or 2 hours or you’ll be able to cook it immediately like i did.

Pre-preparation

Take curd in a bowl and whisk till it’s smooth. Add in all of the ingredients given for paste.Mix well and put aside.

Searing Lamb for Rogan Josh

Now heat ghee in a pot. Add in all of the tempering ingredients and saute for a min. Add in mutton few at a time and brown the meat. It will take around 2 to three mins per batch. Because the mutton browns remove it to a plate and proceed with the subsequent batch. When you find yourself browning the last batch, add all of the browned mutton in and let all of it heat through.

Cooking Rogan Josh

Now add within the curd mix and blend well. Let this cook and brown for 10 mins. Add in water and blend well. Add more salt if needed. Now bring every part to a boil, cover the pot and simmer for two hours. Once it’s cooked and the meat falls off the bone, turn off the warmth and serve with rice or roti.

Take all of your ingredients
First make the curd mix, take thick curd in a bowl
Add in kasmiri chilli powder
green cardamom powder
add in black cardamom powder
now add in clove powder / krambu podi
Now goes dry ginger powder
and a few fennel seed powder..this give the actual aroma
add in pepper powder
mix well and put aside…have a look at the color, that is
why you must use kashmiri chilli powder
now take your mutton pieces
add in some lemon juice
season with some salt
mix well and leave it to marinate for two hours or
you’ll be able to cook it immediately, like i did
This whole curry goes to be cooked in pure ghee
add amount of ghee in a pot
now add in cinnamon stick and bay leaf
add in crushed black cardamom and green cardamom
now comes the primary ingredient…it’s asafoetida / hing
add a healthy amount of hing in
saute this whole thing for a min
now we’re going to brown the meat..i did it in batches
it took me 2 to three mins for every batch..
after browning each batch i took them out on a plate
When the last batch is browned
add the opposite browned meat in
toss well so every part is heated through
now add within the curd mix
mix well with the meat
allow them to cook and brown for around 10 mins
sprinkle in some garam masala powder
mix well..i added some salt as well
cover and simmer on a really low heat for two hours
or you’ll be able to transfer the entire thing to a pressure cooker and
cook as mentioned within the written recipe.
