Ingredients for Ridge Gourd Peel Chutney

  • 3 cups Ridge Gourd Peel
  • 1 tbsp Oil
  • 1 tbsp Chana Dal / Kadalai Paruppu
  • 1tbsp Urad Dal / Ulundu Paruppu
  • 4or 6 Dry Red Chillies
  • 4 to six cloves Garlic
  • 1 tbsp Tamarind
  • 1 tbsp Jaggery
  • Salt to taste
  • Water as needed

For Seasoning:

  • 1tbsp Oil
  • 1 tsp Mustard Seeds / Kaduku
  • 1tsp Urad dal / Ulundu Paruppu
  • 1 sprig Curry leaves
  • ¼ tsp Asafoetida / Hing / Kaya Podi

Learn how to Make Ridge Gourd Peel Chutney 

  1. Wash and peel the skin off ridge gourd. You need to use the flesh in other recipes, for this one you would like only the peel.
  2. Heat 1 tblspn of oil. Add in chana dal, urad dal, chillies and garlic. Fry till golden. Drain them and take it in a blender. Crush them and put aside.

  5. Now make seasoning. Heat oil in a pan, add in mustard seeds, urad dal, asafoetida and curry leaves. Allow them to fry, Pour this into the chutney and blend well.
  6. Serve with rice, idli or dosa.
