Mango rice is a South Indian style rice dish where cooked rice is sauteed with grated raw mangoes, herbs, lentils and spices.

About Mango Rice

Mango rice is a straightforward rice preparation made with cooked rice, grated raw mangoes and spices. The recipe is comparable to that of lemon rice. Grated raw mango is added to a tempering of curry leaves, mustard seeds, hing, chana dal, udad dal, chillies, peanuts, cashew nuts and cooked. Cooked rice is later added to this and garnished with fresh coconut and coriander leaves.

Raw mangoes lend a tangy taste  to the dish and the tempering of curry leaves,mustard seeds, chana dal, udad dal makes the dish flavourful. The lentils added to the tempering alongwith peanuts and cashew nuts give a pleasant crunch to the dish. 

Mango rice makes for a light-weight lunch option and is an ideal  dish for lunch boxes. It tastes good by itself and doesn’t require any accompaniment as such. When you want to have some sides with mango rice, you’ll be able to serve some papad and pickle.

Cooked rice : if you have got cooked rice available, then this recipe gets made in a jiffy. I even have used cooked basmati rice for this recipe. You should utilize any rice of your alternative.

Raw mango : sour raw mango is used for this recipe. The amount of mango will be adjusted depending on the sourness of the mango.

For tempering : oil, curry leaves, mustard seeds, chana dal, udad dal, hing, dry red chillies,green chillies,  peanuts and cashew nuts.

For garnishing : fresh coconut and coriander leaves

Other ingredients : salt, sugar  and turmeric powder.

 

Step-wise recipe with pictures

Wash the mango

Peel  the mango and grate. Keep grated mango aside.

 

Heat oil in a pan. Add mustard seeds, udad dal and chana dal. Saute for few seconds.

 

Add hing, curry leaves, dry red chillies and green chillies. Add peanuts  and saute till the peanuts are roasted well.

Add cashew nuts and saute for few seconds.

Add grated mango and saute  for few seconds.

 

Add turmeric powder, salt and sugar. Mix well and cook for few seconds.

 

Now, add cooked rice and blend well.

 

Add fresh, grated coconut, chopped coriander leaves and blend. Mango rice is able to be served.

 

Note: I even have used totapuri mango. You should utilize any number of sour mango for this recipe.

  • 4 cups of cooked basmati rice
  • 1 large raw mango
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tbsp split black gram (udad dal)
  • 1 tbsp split Bengal gram (chana dal)
  • ¼ tsp asafoetida (hing)
  • 2 sprigs of curry leaves
  • 2 dry red chillies
  • 2 green chillies, roughly chopped
  • ¼ cup peanuts
  • 2 tbsp cashew nuts
  • ¼ tsp turmeric powder
  • a pinch of sugar
  • salt
  • Firstly wash the mango.

  • Peel and grate the mango.

  • Keep grated mango aside.

  • Heat oil in a pan.

  • Add mustard seeds, udad dal and chana dal.

  • Saute on low flame for few seconds till the lentils turn fragrant.

  • Add asafoetida, curry leaves, dry red chillies and green chillies.

  • Add peanuts  and saute till the peanuts are roasted well.

  • Add cashew nuts and saute for few seconds.

  • Next, add grated mango and saute  for few seconds.

  • Add turmeric powder, salt and sugar.

  • Mix well and cook for few seconds.

  • Now, add cooked rice and provides a mild mix, taking care not to interrupt the rice.

  • Add fresh, grated coconut, choppedcoriander leaves and blend.

  • Mango rice is able to be served.

I even have used Totapuri mango for this recipe. You should utilize anyraw mango of your alternative. The amount of raw mango will be adjusted dependingupon the sourness of the mango. If the mango could be very sour, you’ll be able to reduce thequantity of mango.
Leftover cooked rice will be used for the recipe. If makingfresh rice for the recipe, spread the rice on a plate and permit it to coolcompletely before using it.
