I used to be searching for a marriage style ghee rice recipe for a very long time, finally got it from my aunty and when i attempted it, the rice turned out to be delicious. I loved it to the core and the rice turned out to be perfectly flavourful.

About Ghee Rice Recipe

Ghee Rice is a preferred dish made with either basmati rice or seera samba rice. The rice is flavoured with ghee, coriander leaves, mint leaves and fried onion. This dish can also be called as nei choru and is extremely popular throughout south indian specially in muslim community and weddings. 

Ghee rice is normally accompanied with chicken curry or mutton curry.

Ingredients for Ghee Rice Recipe

  • Oil – ¼ cup
  • Cardamom / Yelakai – 6 crushed
  • Black Cumin Seeds / Shahi Jeera – 2 tsp
  • Brinji ilai / Pandan Leaves – 2
  • Basmati Rice – 2 cup
  • Coconut Milk – 2 cups
  • Water – 1.5 cup
  • Salt to taste
  • Green Chillies – 2 slit
  • Onion – 2 large sliced thinly

 

Tips on how to make Ghee Rice Recipe

Preparing Rice

Wash and soak basmati rice for 30 mins. Grind all of the ingredients to a smooth puree, put aside.

Seasoning 

Heat ¼ cup oil in a pressure cooker, add in cardamom, cumin and allow them to sizzle. Now add in drained rice and fry it for six to 7 mins till the rice is nicely toasted. Add in the bottom masala and fry it for few mins so the masala is nicely coated with rice.

Cooking Ghee Rice

Now add in coconut milk, water, salt, green chillies and blend well. Bring it to a boil. simmer the flame, cook covered for 1 whistle, then put the pressure cooker over a tawa and let it cook on very low heat for 15 mins. 

Toppings for Ghee Rice

When the rice is cooking, make the topping. Heat oil for deep frying, add in cashews and fry till golden, now add in onions and fry till golden as well. Remove it and put aside.  Add in curry leaves and fry till golden, drain and put aside. Now add in coriander leaves and fry till golden, drain and put aside. Add in mint leaves and fry till golden. Drain and put aside.

Serving

Once the rice is cooked, open it and fluffy it frivolously. Now spoon this in a big bowl and let it cool frivolously, now add the fried things over the rice and fluff it up. Serve with any curries.

Instructions 

  • Wash and soak basmati rice for 30 mins. Grind all of the ingredients to a smooth puree, put aside.

Notes

  2. Roast the drained rice well in oil so it’s coated with oil and gets dry with no water content.
  3. Now add in the bottom masala and toast it well so the rice gets nicely coated with the masala. It’s going to take around 5 to 7 mins.
  4. Add the required amount of water content.
  5. Cook it only for 1 whistle, and put the entire cooker over a  tawa on low heat for 15 mins so the rice gets cooked to perfection.

Measure rice in a bowl
Wash it and soak for 30 mins

  • Take it off the warmth and take it in a bowl.
  • Add ghee and blend well
  • Serve.

STEP BY STEP PICTURES

1)Take seera samba rice, wash it well and soak for 30 min.
