Considered one of the recipe request which I get often is cake made using ragi flour or millet flour. I even have made a millet cake recipe which is kind of popular within the blog. This recipe is made with ragi flour and it is kind of easy to make as well.
About Ragi Cake Recipe
Ragi is a widely popular grain throughout south India. Ragi flour is used to make porridge, roti, mudde. But did you already know you could make super moist cake using ragi flour.
Cake made with ragi flour, jaggery, eggs, oil and milk. Moist and fluffy cake which is chocolate flavour and is made with finger millet flour. Ragi is of course gluten free. Ragi is a wealthy source of fine carbohydrates; it’s gluten-free and highly suitable for individuals who are gluten intolerant; furthermore, it’s full of several essential amino acids.
There are several recipes on the web which has wheat flour added of their ragi cakes. But I desired to make a cake which is made with just ragi flour. That is one such recipe. It has ragi flour, cocoa powder, eggs, oil, milk and jaggery as their ingredients. Little rising agent like baking powder and baking soda is added. Due to the cocoa powder added the cake taste very chocolaty.

Ingredients for Ragi Cake Recipe
Ragi cake has no refined flour or refined sugar added in it. It’s great for toddlers and children as a snack box recipe. The cake may be very light in texture and has perfect crumbs. Ragi Flour

Jaggery
Organic powdered jaggery is utilized in this cake. The cake is mildly sweet due to the jaggery and taste perfect with a cup of tea or coffee.
Oil
Melted butter or oil is utilized in this cake which makes it super moist and fluffy. Use flavourless oil like canola oil, refined oil or sunflower oil to make this cake.
Eggs
There aren’t any egg substitute on this cake. Substituting the eggs with curd or banana is feasible but I haven’t tried it up to now. I’ll make and share an eggless version of ragi cake and share it here.

- Using blender jar is simple method to make the cake batter. Because it emulsify the oil with the eggs, sugar and makes the cake tender.
- Don’t over bake the cake. Bake until the cake is just baked. Over baking may make it hard.
- Melted butter may be used as a substitute of oil.
- Chocolate chips and chopped nuts may be added within the cake for texture.
- You’ll be able to make chocolate glaze to pour over the cake once baked.

1)take eggs in a blender.

2)Add in vanilla extract

3)Add in jaggery

4)Add in oil

5)Mix till creamy.

5)Now it’s frothy.

6)Add cocoa powder

7)Add in baking soda

8)Add in baking powder.

9)Add in milk

10)Mix till combined.

11)Pour the chocolate mix into the ragi flour.

12)Mix gently till combined.

13)Pour the batter into the parchment lined baking tray

14)Bake till done.

15)Slice and serve.

16)Enjoy.
