Sindhi Kadhi is a flavourful and tangy curry constituted of besan (gram flour) and assortment of vegetables.
Sindhi Kadhi is a well-liked dish from Sindhi cuisine. For Sindhis, Sindhi Kadhi is greater than only a dish. It’s a cherished a part of their culinary heritage. Just like the dal chawal for North Indians, varan bhaat for Maharashtrians, sambhar rice for South Indians, Sindhi Kadhi chawal is a comfort food for Sindhis. Sindhi Kadhi, chawal with aloo tuk as a mix is deeply loved by Sindhis. The mix is so flavourful that it has the potential to be loved by anyone no matter their cultural background. About Sindhi Kadhi
Sindhi Kadhi is a delicious curry made using besan and assortment of vegetables. Besan is added to a seasoning of mustard seeds, cumin seeds, fenugreek seeds, curry leaves and is roasted to perfection. To the roasted besan, water, tomato puree ,spices are added and cooked well. Later, the vegetables are added and allowed to cook on low heat. Finally tamarind pulp and jaggery is added and the kadhi is cooked for few more minutes.
Sindhi Kadhi pairs excellently with steamed rice and aloo tuk on the side.

List of ingredients to make Sindhi Kadhi
Besan : Besan or gram flour is the ingredient that offers the Kadhi its creamy consistency.
Vegetables : Tomatoes, Cluster beans (Gavaar), Drumstick, Okra and potatoes.
Spices and herbs : green chillies, curry leaves, ginger, mustard seeds, cumin seeds, methi seeds, turmeric powder, red chilli powder
Other ingredients : Oil, tamarind pulp, jaggery and salt.
Step-wise recipe with pictures
Wash 3 tomatoes. Chop them and mix to a superb paste.


String the cluster beans (gavaar) . Peel the potatoes and chop into large cubes. Cut off the pinnacle and the opposite end of every okra. . Peel the drumstick and chop into 2 inches pieces.

Heat oil in a pan. Add mustard seeds, cumin seeds, methi seeds, asafoetida and curry leaves. Saute for few seconds.

Add besan and saute on low heat till the besan loses its raw smell and turns fragrant.

Add ginger paste and chopped green chillies. Saute for couple of minutes.

Add 1 cup of water and keep stirring.

Add tomato puree and keep stirring. Add one other 1 ½ cups of water and keep stirring.

Add turmeric powder, red chilli powder and salt. Mix well. Cook on low heat and permit the mixture to return to a brisk boil.

Add chopped drumstick, cluster beans and chopped potatoes. Give a fast mix.

Cover and permit the vegetables to cook on low heat. In the mean time, heat 1 tsp oil in a pan. Add the bhindis and saute on low heat. Bhindis are shallow fried and added to the kadhi as they’re slimy by nature. Once the bhindis are fried, keep them aside.


Check if the veggies within the kadhi are cooked. Once the veggies are cooked, add fried bhindis. Cover and cook for 3 to 4 minutes.

Next, add tamarind pulp and jaggery. Cover and cook for a minute.

Sindhi Kadhi is able to be served with steamed rice and Aloo Tuk.

- 4 tbsp gram flour (besan)
- 3 tomatoes
- 15 cluster beans (gavaar)
- 1 drumstick
- 10 to 12 okras (bhindi)
- 2 potatoes
- 1 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp ginger paste
- 2 green chillies, finely chopped
- 2 tbsp tamarind pulp
- a small piece of jaggery
- salt to taste
