Beetroot Kosambari
I enjoy salads for lunch often, today are too hot to have hot meals. So i enjoy a bowl of cold salad or smoothies for lunch. I made this couple days back and enjoyed it to the core. I like the sweetness from beets with the tanginess from the lemon on this.

Ingredients for Beetroot Kosambari
- Beetroot – 1 large peeled and grated
- Yellow Moong Dal / Pasi Paruppu – ½ cup
- Onion or Shallots – ¼ cup chopped finely
- Coriander leaves – 2 tbsp chopped finely
- Lemon Juice – 1 to 2 tbsp
- Salt to taste
- Green Chilli – 1 chopped finely
